Turkey Pot Pie

The day after Christmas we all need turkey recipes! Here’s one of our favorites and it’s sooooooo easy!

*Preheat oven to 350 degrees

Ingredients

1-2 cans of pastry puffs. (I use the crescent packages you roll out.) If you’re not watching your carbs, get two cans of the roll out pastry. (you’ll spread one on the bottom of the mixture and one on top.)

2-3 cups of diced turkey (or chicken)

1 large bag of mixed veggies (peas, carrots, lima beans, green beans) or leftovers

1 large yellow onion

1 can of diced green chilies

1 can or fresh sliced mushrooms

1 can of cream of mushroom or cream of chicken soup

1 jar of turkey gravy (or use what you have left over from dinner)

Salt and pepper

1 teaspoon of garlic powder

2 cups of shredded cheese of your choice (we like the 5-style mixed Mexican cheese)

Directions:

Mix all the ingredients except the pastry and the cheese in a large bowl.

You’ll need a large rectangle pan (I like my glass ones).

*If you’re not watching your carbs, spray lightly the pan and spread out the pastry, stretching it to cover the entire pan.

Dump the mixture over the pastry. Cover with the cheese.

Roll out the dough and place it on top of the mixture.

Bake for 30 minutes.
