You’ll love this inexpensive, warm on a cold day soup! And it freezes excellent! I make a large batch, we eat it for 2 days and then freeze the rest for another day.
Ingredients:
1 pound of hamburger (or ground turkey, chicken or sausage) *I like to combine hamburger and Italian sausage.
1 onion diced (I like a combo of red and yellow onions)
8-10 small red and Yukon potatoes cut
2 cloves of garlic (or 2 tablespoons of jar garlic)
3 cups of beef broth
1 cup of heavy cream
1 cup of shredded cheddar cheese
2 tablespoons of butter
Salt and Pepper
Chives
1 small can of green chilies
Directions:
In a pan or large pot, melt the butter and brown the meat and onions. If you’re using a large pot, (I put all this so far in a crock pot so I can leave it and forget it) add the diced potatoes, beef broth, green chilies, garlic, salt, pepper, heavy cream and cheddar cheese. Cook on low for 2 hours. At the end of 2 hours, turn to warm and add the chives. We let this stay warm all day and eat when we’re hungry.
