Stuffed Mushrooms (Keto friendly)
Preheat oven to 350 degrees
4-6 large Portobello mushrooms (washed and stems removed)
In a bowl mix:
1 package of cream cheese
1 chopped onion
TSP of garlic
1 chopped green or red pepper
1 diced tomato
Add chives to taste
1 tablespoon of lemon juice
I’ve also added browned Italian sausage! ßLove this combo! or add dried bacon bits. Get creative
Stuff the mushrooms with the mixture and sprinkle with your favorite cheese. Place on a cookie sheet lined with foil.
Bake for 15 minutes. ENJOY!
